Harvested by hand each spring from the high desert above 4,000 feet. The oils hold the smell of rain before it falls.

Sip started in a kitchen in Barrio Viejo, Tucson — because the founder, Marta Delgado, kept showing up to dinner parties with a $4 sparkling water and feeling like she owed the host an apology.

She wanted something in the glass that looked as considered as the wine everyone else was pouring. Something that tasted like it came from somewhere.

Two years later, it's on the shelf at six Arizona grocers and counting. Still brewed in small batches. Still hand-numbered. Still made from ingredients Marta can drive to.
